  2. Let the prepared mixture rest in the fridge for 1-2 hrs.
  3. After 2 hrs take the mixture and add 2tsp baking soda(optional) and a handful of sesame seeds(optional). Some people do not add sesame seeds but I do to give the falafel a nice crunch and fluffiness.
  4. Roll them in small kofta sized balls and again place in the refrigerator for around 4-5 hrs so that these bind together well.
  5. Now lastly after 4 hrs fry these in medium hot oil.
  6. Serve falafel with humus.
  7. For making humus, add all the ingredients in a mixer grinder and purée into a sauce like paste.
  8. For a fluffy humus add some ice cubes in the grinder while making a paste of it.
  9. Refrigerate it for at least 1 hour before serving.
  10. For garnishing add olive oil over it and sprinkle some cumin powder.
  11. Falafel can be served with humus and tahini sauce.

Veggies - beetroot, cabbage, radish or carrots can also be added to the ground chickpea mixture. Spices - various combinations of spice powders can be used to make. Six falafel balls prepared with ground chickpeas, vegetables, garlic and spices. Our house made hummus consists of pureed chickpeas blended with tahini, olive oil, lemon juice, salt and garlic.
