Fill each sterilized jar with a tight pack.. Leave 1/2" headspace. Wipe lip of jar with vinegar. Place lid and ring on and process in a pressure cooker for 60 minutes (pint jars or less)
I use petite diced tomatoes which I drain before adding to the meat. I like the flavor and texture that the tomatoes add, but if you're not a big fan. When jars are opened all you have to do is heat the meat and assemble tacos or taco salad. It doesn't get any easier than that. These also make great burritos or any favorite Mexican casserole.
