- Mix the flour, sugar, salt and nutmeg and sift these. (Also flour for the kneading)
- Mix the egg, warm milk, butter and yeast in a separate bowl.
- Pour the liquid into the dry ingredients and mix with a spatula or a hand mixer. The dough is quite sticky but that is exactly how you want it. Donot be tempted to add extra flour, but you can add a dash of milk if you need. (The more sticky and soft, the better, so add milk as needed). The milk aids to the stickiness.
- Put a bit of oil onto to your work surface and knead the dough. This could take you anywhere between 10 to 15 mins. Knead untill the dough is elastic and soft.
- Transfer the dough to a lightly greased bowl and cover with a plastic wrap or a samp kitchen towel. Leave it to rise for one and a half hour or untill it doubles in size.
- After it's doubled in size, put some flour on the work surface. Flour the top of your dough and gently press it down to pop any bubbles.
- Roll it out to about half an inch thickness. (Be careful while rolling it out, you dont want the donuts to be too thin). Cut out the donuts using a donut cutter, or using a glass and a bottle cap.
- If you have some of the dough left, you can cut little munchkins out using a bottle cap and use these at the start of the frying to get an idea about the temperature and colour.
- Place the donuts onto some butter paper, leaving some space in between them and again let them rise for 20 to 30 mins. (30 preferably)
- (You can cut the butter paper around the donuts, which makes it easier to maneuver them into the oil without ruining the shape)
- The best temp for frying these is 160°C or at a temp where they are bubbling gently. Cooking these at a slightly lower temp will assure an even browning. You want to fry them on the lowest flame for a total of 3 minutes for a regular sized one, 4 minutes for a huge one, flipping them halfway through. I fried 2 at one time
- Once the oil is at 160, turn the flame on low. Fry 2 to 3 at a time. If you only do 1 at a time, that's gonna get over-fried. (Let the oil heat up to 160 slowly, the slower the better)
- 2 at a time- total 3 mins and if you do 3 at a time, total 4 mins.
- You are going to fry these on both sides untill they're beautifully golden.
- Set them onto a wire rack or a towel to cool for a bit. (Or you could place them back on the butter paper cutouts to drain the oil). Make sure to put them on tissue papers while cooling to drain all the oil.
- To make the glaze, mix the ingredients of the glaze; the sugar, melted butter, vanilla and milk. Use a whisk. Add the milk depending on how thick or thin you want your glaze to be. (I prefer mine thin). You can control the sweetness of the donuts by adjusting the amount of glaze you put on them.
- If you dont want the donuts to be too sweet, you can cut the ingredients of the glaze in half. You can also reduce the sugar depending on your taste. You can also add coco powder to the glaze to make it chocolatey.
- Drop your donuts into the glaze halfway after they are cool (dont leave them in for too long or they will become very sweet). Put them on a wire rack and let the glaze set.
- You can add chocolate sauce or sprinkles on the top if you like.
