Jadoh is a delicious rice dish from Meghalaya cuisine. Rice is usually cooked with pork or meat with a few spices, but here is a vegetarian version of the same. I have used potato cubes, it makes a good brunch or a weekend meal.

Jadoh veg is one of the most favored of recent trending meals on earth. It’s easy, it is fast, it tastes yummy. It is appreciated by millions every day. Jadoh veg is something that I’ve loved my whole life. They’re fine and they look wonderful.

To begin with this particular recipe, we have to first prepare a few ingredients. You can cook jadoh veg using 13 ingredients and 6 steps. Here is how you can achieve it.

The ingredients needed to make Jadoh veg:
  1. Get 150 Grams long grain basmati rice
  2. Take 2-3 Potatoes
  3. Take 1-2 Carrots
  4. Get 100 Gram paneer / tofu
  5. Take 2 Green chillies
  6. Take 1 Bowl fresh coriander leaves
  7. Prepare 3-4 Onions sliced
  8. Take 2 Bay leaves
  9. Prepare as needed black pepper powder
  10. Get to taste salt
  11. Make ready 4 Tablespoon oil
  12. Prepare 1 Teaspoon cumin seeds
  13. Get 1-2 tsp ginger paste / grated ginger

It is a typical Meghalaya dish, known for its aromatic taste and minimum use of oil. I used store bought Oriental style tofu in place of pork. Here is my vegetarian Jadoh with tofu and mushrooms. This simple yet flavour-some rice recipe is easy to make and very healthy too.

Instructions to make Jadoh veg:
  1. Firstly wash and soak the rice. And keep aside. Put A big deep vessel on flame, put oil to heat add cumin seeds and sliced onions. Cook on low until golden brown. Meanwhile make A green chilli and coriander leaves rough paste in A mortar.
  2. Add this paste and cook for 30 seconds. Than put diced potatoes (with skin) and diced carrots. Cook this with covered lid for two minutes.
  3. Now burn tip of by leaves on flame and immediately put it in the vessel. Then add salt, turmeric, ginger paste, and mix well.
  4. Now drain excess water from rice and add it. Mix gently and fry the rice for 2 minutes. Than add 3 glasses of water, salt as per taste and black pepper powder. Let it cook on high flame untill the water is completely absorbed.
  5. Meanwhile saute / shallow fry the paneer cubes in little oil and keep aside.
  6. Now add the paneer cubes. Mix gently with A fork and cover the lid and keep it on low flame for 3-4 minutes. Garnish with fresh cilantro / coriander and Serve hot. Please note i hAve used paneer You can use tofu and also add fresh peas or brocolli as per your choice.
