- Preheat oven to 170c
- Beat eggs in large bowl
- Sift flour into bowl and mix until smooth
- Dice bacon and add to bowl and mix
- Add grated cheese to bowl and mix
- Dice onion and add to bowl and mix
- Add vegetable oil to bowl and mix
- Grate both zucchinis into bowl and mix
- Use baking paper for easy removal and bake for 30 minutes
It's great hot or cold, which means it's perfect for school lunches or afternoon tea. One day I wanted to serve zucchini as a side dish—but I didn't have the time to slice and deep-fry it. So I came up with these fritters instead! They go especially well with barbecued ribs or pork chops and corn on the cob. The zucchini slice is similar to a Keto bread in consistency.
