The ingredients needed to make Yam Curry:
  1. Get 1 cup chopped yam diced into small pieces
  2. Prepare 1 tsp red chilli powder
  3. Take 1/4 tsp turmeric powder
  4. Make ready 1 tsp coriander powder
  5. Make ready 1 tsp fennel seeds
  6. Make ready to taste Salt
  7. Get Pinch asafoetida powder
  8. Prepare 1 onion
  9. Take 2 green chilies
  10. Take 3 Garlic cloves
  11. Prepare 1/2 inch ginger
  12. Make ready 1 spring Curry leaves
  13. Take 1 inch cinnamon
  14. Get 1 star anise
  15. Take 1 tbsp ghee

How to Make Spicy yam curry. Add onion, green chillies, turmeric powder and curry leaves. Fry till onion becomes soft and pink. Then add red chilli powder, salt and fry for a minute.

Instructions to make Yam Curry:
  1. Peel and clean the yam and dice into small pieces then heat a pressure cooker and saute fennel seeds for few secs then tip in chilli powder,coriander powder,turmeric powder,asafoetida powder and saute for few secs be careful not to burn it later add the diced yam,add sufficient water and salt,close the lid of the pressure cooker and pressure cook till done,it took 3 whistles.
  2. Into the chopper add onions,ginger,garlic and 5-6curry leaves and mince it to fine pieces.
  3. Heat ghee in a pan tip in cinnamon,star anise and saute till it's aromatic then add all the finely chopped ingredients and saute till onions are translucent then mash the pressure cooked yam and add along with the gravy and cook till the gravy thickens.Once done tear some curry leaves and mix nicely.Swicth off the flame and serve hot with roti or white rice.

Let cooker cool, remove lid and return to the fire. To make Yam Curry: Cut the peeled yams into small pieces. (The baby ones only need to be cut in half and some left whole). In a bowl combine the garlic and ginger paste, curry powder, turmeric, cumin and garam masala with a little water. Heat a medium pot, large saucepan or Dutch oven over medium.
