- Wash lentils thoroughly then add 1l of water. Leave on high gas with chopped onions, turmeric powder, curry powder, bay leaves, and salt
- Stir the lentils occasionally until all the excess water goes and you are happy with the consistency of the lentils. Cooked lentils should turn yellow but if the lentils doesn’t break then you can use a whisk to break it
- In a separate, small pan, fry your garlic in 1/3 cup of oil until it is brown then add it to your lentils curry
- Cover your lentils curry and cook for another 10 minutes on low gas then garnish with coriander and fried chillies

Dal Spices- Dal is made with far less spices than most Indian curries! This recipe calls for a simple combination of cumin, garam masala and turmeric.
