  13. Prepare 1/2 tsp Mustard seeds

  16. Prepare As required Few Curry leaves

I created this curry to be eaten as a main dish or to be served on top of rice or with sadza. The recipe is quite easy to follow and the curry make the cow-peas flavourful. How to Make Black Eyed Peas (cowpeas) and Potato Curry. Add onions, ginger garlic, salt along with bay leaf and spices.

Instructions to make Cowpea Curry:
  1. Soak cowpea for 3 to 4 hours.
  2. Pressure cook soaked cowpea for 2 whistles.
  3. Grind the ingredients to a smooth paste.
  4. Cut brinjal into long pieces.
  5. Heat kadai and add the ingredients to temper.
  6. Add brinjal pieces and fry it.
  7. Pour tamarind water and allow to cook.
  8. Add the pressure cooked cowpea.
  9. Added needed salt and mix well. Allow to boil for 1 minute. Now healthy and simple cowpea curry is ready to serve.

The variety of cowpeas are many. Right from the black eyed cowpea to the brown kidney shaped variety. For this recipe I have used the brown or deep red variety which is commonly grown in Kenya. I have used whole cowpeas and not the split one or dal. This curry or dal goes well with rotis, flaky parathas or with rice.
