Instructions to make Mushroom Xacuti:
  1. Wash, clean and chop the mushrooms into small pieces. Keep aside.
  2. Heat 2 Tbsp oil in a wok/ karahi. Add chopped onions to it and saute till pink.
  3. Now, add coriander seeds, peppercorns, clove and dry red chillies. Saute for 2 minutes till it slightly changes colour.
  4. To this add grated coconut and saute on low flame till it turns light brown. Take care that it doesn't burn.
  5. Switch off the flame. Add tamarind paste, turmeric powder and kashmiri mirch powder. Stir well and let the mixture cool.
  6. Transfer the cooled coconut mixture to a blender jar and grind to a fine paste, adding about 1/2 cup of water. Keep the paste aside.
  7. Heat 1 Tbsp oil in the same wok and add chopped tomatoes to it. Cook till the tomatoes are soft and mushy.
  8. Add chopped mushrooms and little salt to the mushy tomatoes. Mix and cook till mushrooms release water and turn soft.
  9. Now add the coconut paste to the mushrooms. Add 1/2 cup water if required. Adjust salt and mix well. Cook till the mushrooms, are completely cooked(around 10 minutes).
  10. Xacuti is ready. Serve garnished with chopped green coriander.
