Scatter the fontina, Cotija, green onions, chorizo and thyme over the warm tart shell. Whisk the eggs in a large bowl. Add the milk and cream and whisk until smooth. Mushroom quiche with all-butter pie crust filled and baked with mixture of egg, cream, milk, sauteed mushrooms and shallots.
Steps to make Chorizo and mushroom Quiche:
- Place the crust in a round baking dish and dock it with a fork and prebake for 10 min to set
- In a sauté pan cook the chorizo,mushrooms and shallots.
- In separate bowl, whisk the eggs and cream and add the salt and pepper
- Remove the crust from the oven and add the chorizo mixture top with mozzarella and the egg mixture.
- Place in the oven and bake at 180F for 35 min. The center should come out clean.
