  4. When the chicken is done, toss it with the yogurt mixture & stir to coat.
  5. Divide the cauliflower mixture between 2 bowls. Top each with half of the chicken and then half of the mozzarella.

Serve with yogurt, cilantro, and lime wedges. In a small bowl, whisk together chicken stock, sambal oelek, brown sugar and lime juice; set aside. In a large bowl, combine chicken, cornstarch and fish sauce, tossing to coat and letting the chicken absorb the cornstarch. Heat olive oil in a large skillet over medium heat. In a bowl, mix flour and seasonings; toss with chicken.
