Stir and turn again, turn the heat down a little and put a lid on the pan. When the potatoes are almost done add the onion to the pan. Add the potatoes and fry all together for a couple of minutes. Then stir in the cumin, paprika, cayenne pepper, chilies and tomatoes.

I used my Palermo Spiralizer for the potato and onion, and I used Hot and Spicy Chicken Sausage, instead of mild. I started by pan frying the sausage a bit for a nice sear on the outside. This also makes it easier to cut the sausage into pieces. I used mini sweet peppers because they're bursting with flavor and I love the contrast against the spicy hot sausage.
