  1. Take a large bowl, add maida, aata, cocoa powder and coffee powder, give a mix, cover it and keep them aside.
  2. Now take a deep bowl, add ghee and powdered sugar to it and whisk it for about 7 mins till it becomes light and frothy. Now add the ghee batter to the dry ingredients and mix them all with cut and fold method. Add the choco-chips to it and mix them all to form a smooth dough.
  3. Donot Knead the dough. Just mix it.
  4. Now cover it and keep it aside. Heat a kadai and cover the base with salt. Place a stand over it and cover it and pre-heat it for about 7 mins. First 3 mins on high flame then 5 mins on medium flame.
  5. Grease a plate with oil or ghee and made pedas out of the dough and flatten a bit. Spread some choco-chips over it and place them over the plate/tray and put it over the stand and cover and bake it in a low flame for 20 mins then you can flip it if required, then again cover it and bake it for about 10 mins. If your cookies are properly cooked from both the sides after 20 to 25 mins., no need to flip because flipping causes the choco-chips to melt and harden which happened with me.
  6. But if your cookies are properly and perfectly cooked with slight golden colour on the top of it then no need to flip. Then repeat the same with the other batches too. Keep a good amount of space between the two cookies so that it doesn't get stick to each other and if required, you can flip too. Cool them for about 20 mins then you can enjoy it. Serve them in an air tight container so that it remains fresh for longer.
