- preheat oven to 450°
- roast should be at room temperature. rinse and dry roast.

- reduce oven heat to 350° and put veggies in.
- roast meat 50-60 minutes and veggies the same time, mixing every 15 minutes.
- place roast on cutting board and let rest 20 minutes.
- heat pan over medium heat, add broth and wine. simmer and reduce heat to low. add butter, salt and pepper.
- if veggies are done, take them out.
- cut roast, serve with veggies and gravy.
