Instructions to make 🍲Kheer🍲

(rice pudding):

  1. First thinly sliced the nuts and soaked the rice in a water and keep it aside.
  2. Turn on the heat and put the milk non-stick pan over it, let the milk boil. - Boil the milk on low heat till the milk reduce to half of the original quantity.
  3. Add washed rice and mix it properly, cook it on low heat for 10-12 minutes, keep stirring in between.
  4. Add sugar and mix it properly, add cardamom powder into the milk and stir. - - Add sliced nuts (reserve some garnishing) into the milk and cook it for 2-3 minutes.
  5. Increase the heat and boil it for 2 minutes, keep stirring continuously. - - Turn off the heat, add saffron and leave the kheer for 20 minutes. - Garnish with nuts and saffron. - - Ready to serve.
  6. #Tip: - - Do not add rice before sugar because the rice will not cook properly. - - serve it hot or refrigerate it for 2-3 hrs and serve cold.

It is basically rice pudding made with rice and milk infused with saffron, cardamom and assorted dried fruits. It's good hot, cold, runny, thick, with cashews, with fresh fruit, with raisins, for breakfast, for dessert, for dinner, lunch. etc. You need to stay with the milk the entire time the rice is cooking - otherwise, you'll end up with burnt milk, which is one of the worst things you'll ever. I've always loved rice pudding and this one is just that little bit different to please everyone in my house. I did a couple of things different, cut the recipe in half for me and DH Wonderful kheer recipe!
